Description

Easy Steamed Cassava Cake is a soft, creamy, and lightly chewy Filipino dessert made with grated cassava, coconut milk, condensed milk, and eggs, then gently steamed until perfectly set. This easy cassava cake recipe is simple to prepare, rich in coconut flavor, and perfect for merienda, family gatherings, or any time you want a homemade steamed dessert.

Ingredients

2 pounds grated cassava

1 cup coconut milk

1 can sweetened condensed milk

1 can evaporated milk

2 large eggs

1/2 cup sugar

1/4 cup melted butter

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup grated cheese

Instructions

1. Grease an 8-inch round or square heat-safe pan and prepare a steamer with gently simmering water.

2. In a large mixing bowl, whisk together the coconut milk, sweetened condensed milk, evaporated milk, eggs, sugar, melted butter, vanilla extract, and salt until smooth.

3. Add the grated cassava and stir until fully combined and evenly distributed.

4. Pour the mixture into the prepared pan and smooth the top.

5. Sprinkle the grated cheese over the surface if using.

6. Place the pan in the steamer and wrap the lid with a clean kitchen towel to prevent water from dripping onto the cake.

7. Steam for 45 to 55 minutes, or until the cake is set and a toothpick inserted in the center comes out mostly clean.

8. Remove the pan carefully and let the cake cool completely before slicing and serving.

Notes

Use thawed frozen cassava if fresh grated cassava is not available, and drain any excess liquid before mixing.

Wrap the steamer lid with a towel so condensation does not fall onto the cake while it cooks.

Let the cake cool fully before slicing for the neatest texture and cleanest edges.
