Ingredients
200g cheese tortellini
1 cup cherry tomatoes
1 cup cucumber
1/4 cup red onion
1/2 cup bell pepper
1/4 cup fresh parsley
3 tablespoons olive oil
2 tablespoons lemon juice
1 clove garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Bring a pot of salted water to a boil and cook the cheese tortellini according to the package directions. Drain and rinse with cool water.
2. While the tortellini cooks, slice the cherry tomatoes, dice the cucumber, thinly slice the red onion, and chop the bell pepper.
3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
4. In a large bowl, combine the cooled tortellini, chopped vegetables, and parsley.
5. Pour the dressing over the salad and toss gently until well coated.
6. Chill in the refrigerator for at least 30 minutes before serving.
Notes
Make sure the tortellini is fully cooled before combining.
For extra protein, add grilled chicken or chickpeas.
Double the dressing if serving later to keep everything fresh and flavorful.
