Glazed Mixed Berry Scones are tender, buttery breakfast scones filled with juicy mixed berries and finished with a sweet vanilla glaze. These homemade berry scones are perfect for brunch, spring baking, or an easy bakery-style treat with coffee or tea.
Ingredients
2 cups all-purpose flour
1/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1/2 cup heavy cream
1 large egg
1 teaspoon vanilla extract
1 cup mixed berries
1 cup powdered sugar
2 tablespoons milk or lemon juice
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
3. Cut the cold butter into the dry ingredients until the mixture looks like coarse crumbs.
4. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
5. Pour the wet mixture into the dry ingredients and stir gently until a shaggy dough forms.
6. Fold in the mixed berries carefully so they stay mostly intact.
7. Turn the dough onto a lightly floured surface and shape it into a round disk about 1 inch thick.
8. Cut the disk into 8 wedges and place them on the prepared baking sheet.
9. Bake for 18 to 22 minutes, until the scones are lightly golden on top.
10. Let the scones cool for 10 minutes on a wire rack.
11. Whisk together the powdered sugar and milk or lemon juice until smooth.
12. Drizzle the glaze over the cooled scones and let it set before serving.
Notes
Use very cold butter for the flakiest texture.
If using frozen berries, do not thaw them before mixing into the dough.
For a brighter glaze, use lemon juice instead of milk.
