Description

Easy Corned Beef Hash is a hearty skillet breakfast made with crispy potatoes, savory corned beef, and onions, all cooked until golden and delicious. It is simple, satisfying, and perfect for using leftover or canned corned beef in a comforting meal.


Ingredients

2 tablespoons butter

1 tablespoon olive oil

1 small yellow onion diced

3 cups cooked potatoes diced

2 cups corned beef chopped

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika

2 tablespoons chopped fresh parsley

4 eggs optional

1/2 teaspoon salt or to taste


Instructions

1. Heat a large skillet over medium heat and add the butter and olive oil.

2. Add the diced onion and cook for 3 to 4 minutes until softened.

3. Stir in the diced potatoes and spread them into an even layer. Let them cook for a few minutes without stirring so they crisp up.

4. Add the chopped corned beef, garlic powder, black pepper, smoked paprika, and salt. Stir gently, then press the mixture into the skillet.

5. Cook for 8 to 10 minutes, stirring once or twice, until the potatoes are crisp and the corned beef is heated through.

6. If using eggs, make 4 small wells in the hash and crack an egg into each one. Cover and cook for 3 to 5 minutes until the whites are set.

7. Sprinkle with chopped parsley and serve hot.

Notes

Use cooked, chilled potatoes for the crispiest texture.

Do not stir too often or the potatoes will not develop golden edges.

Taste before adding extra salt since corned beef can already be quite salty.
