Ingredients
1 pound large shrimp, peeled and deveined
2 cups fresh pineapple chunks
1 red bell pepper, cut into chunks
1 small red onion, cut into chunks
2 tablespoons olive oil
2 tablespoons lime juice
1 tablespoon honey
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped cilantro
lime wedges for serving
Instructions
1. If using wooden skewers, soak them in water for 20 to 30 minutes. Preheat the grill to medium-high heat and lightly oil the grates.
2. In a medium bowl, whisk together the olive oil, lime juice, honey, garlic, smoked paprika, salt, and black pepper.
3. Add the shrimp to the bowl and toss well to coat. Let the shrimp marinate for 15 to 20 minutes.
4. Thread the shrimp, pineapple, red bell pepper, and red onion onto skewers, alternating the ingredients.
5. Place the skewers on the grill and cook for 2 to 3 minutes per side, until the shrimp are pink and opaque and the pineapple is lightly charred.
6. Transfer the skewers to a serving platter and sprinkle with chopped cilantro.
7. Serve warm with lime wedges on the side.
Notes
Fresh pineapple gives the best texture and caramelizes beautifully on the grill.
Do not marinate the shrimp too long or the lime juice can start to change the texture.
Keep a close eye on the skewers because shrimp cooks quickly and can become rubbery if overdone.
