Description

Guinness Beef Stew is a rich and hearty comfort food dinner made with tender beef chuck, carrots, potatoes, onions, beef broth, and Guinness stout, slowly simmered until thick, savory, and deeply flavorful.


Ingredients

2 pounds beef chuck roast, cut into chunks

1 teaspoon salt

1/2 teaspoon black pepper

3 tablespoons all-purpose flour

2 tablespoons olive oil

1 large yellow onion, chopped

3 cloves garlic, minced

3 large carrots, peeled and sliced

2 celery stalks, sliced

1 tablespoon tomato paste

1 1/2 cups Guinness stout

3 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 bay leaf

1 pound baby potatoes, halved

1 tablespoon chopped fresh parsley


Instructions

1. Season the beef chuck with salt and black pepper, then toss it with the flour until evenly coated.

2. Heat the olive oil in a large Dutch oven over medium-high heat and brown the beef in batches on all sides. Transfer the browned beef to a plate.

3. In the same pot, cook the onion, carrots, and celery until they begin to soften. Stir in the garlic and tomato paste and cook for 1 minute.

4. Pour in the Guinness stout and scrape up the browned bits from the bottom of the pot. Let it simmer for 2 to 3 minutes.

5. Return the beef to the pot and add the beef broth, Worcestershire sauce, dried thyme, and bay leaf. Stir well.

6. Add the baby potatoes, bring everything to a gentle simmer, then reduce the heat to low. Cover partially and cook for 1 hour 45 minutes to 2 hours, until the beef is tender.

7. Remove the bay leaf, taste for seasoning, and garnish with fresh parsley before serving.

Notes

For the best texture, use beef chuck roast because it becomes tender and flavorful during the long simmer.

Brown the beef in batches instead of crowding the pot so you get a deep, rich crust that adds more flavor to the stew.

The stew tastes even better the next day, so it is a great recipe to make ahead for an easy dinner later.
