Halloween Eyeball Jello Shots are a spooky party favorite made with fruity gelatin, vodka, lychees, and blueberries for a creepy eyeball effect that is perfect for Halloween parties, adult treats, themed dessert tables, and easy make-ahead entertaining.
Ingredients
3 oz lime gelatin
1 cup boiling water
1/2 cup cold water
1/2 cup vodka
12 lychees, drained
12 blueberries
2 tbsp red decorating gel
12 plastic shot cups
Instructions
1. In a medium mixing bowl, whisk the lime gelatin with the boiling water until fully dissolved and smooth.
2. Stir in the cold water and vodka until well combined.
3. Place the shot cups on a tray and pour the gelatin mixture into each cup, filling them about three quarters full.
4. Refrigerate for 45 minutes to 1 hour, until the mixture is partially set.
5. Press one blueberry into the center of each lychee to create the eyeball garnish.
6. Gently place one lychee eyeball into each partially set shot.
7. Add a small amount of red decorating gel around each lychee for a bloodshot look.
8. Return the tray to the refrigerator and chill for 2 to 3 more hours, or until fully set.
9. Serve cold straight from the fridge.
Notes
Use lychees packed in syrup or juice, then drain them well so excess liquid does not water down the top of the shots.
Let the gelatin cool slightly before pouring so the alcohol flavor stays balanced and the cups are easier to handle.
For the best spooky presentation, serve these on a dark tray and keep them chilled until the last minute.
