Description
Honey Garlic Chicken and Rice is an easy chicken dinner made with tender chicken, fluffy rice, fresh garlic, honey, and soy sauce for a sweet and savory one pan meal that is perfect for busy weeknights, family dinners, and comforting meal prep.
Ingredients
2 tablespoons olive oil
1 1/2 pounds boneless skinless chicken thighs or chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
4 cloves garlic, minced
1/3 cup honey
1/4 cup low sodium soy sauce
1 tablespoon rice vinegar or lemon juice
1 tablespoon unsalted butter
1 cup uncooked long grain white rice
2 cups chicken broth
2 tablespoons chopped parsley or green onions
Instructions
1. Pat the chicken dry and season both sides with salt, black pepper, and paprika.
2. Heat the olive oil in a large deep skillet over medium heat and sear the chicken for 4 to 5 minutes per side until lightly golden. Remove the chicken to a plate.
3. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
4. Stir in the honey, soy sauce, rice vinegar, and butter. Let the sauce simmer for 1 to 2 minutes until smooth and glossy.
5. Stir the uncooked rice into the sauce, then pour in the chicken broth and mix well.
6. Return the chicken to the skillet and spoon some sauce over the top.
7. Cover and simmer on low heat for 18 to 22 minutes, until the rice is tender and the chicken is fully cooked.
8. Let the pan rest for 5 minutes, then fluff the rice and garnish with chopped parsley or green onions before serving.
Notes
Use chicken thighs for the juiciest result and the richest flavor.
Keep the heat low once the rice is added so it cooks evenly without scorching the bottom.
If the rice looks dry before it finishes cooking, add a small splash of broth and continue simmering.
