Description

Irresistible Brown Sugar Banana Muffins are soft, moist, and packed with sweet banana flavor, rich brown sugar, and a cozy hint of cinnamon, making them the perfect easy breakfast muffin, snack, or homemade treat.


Ingredients

3 ripe bananas

1/2 cup light brown sugar

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1/4 cup milk

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt


Instructions

1. Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners or lightly grease the pan.

2. In a large mixing bowl, mash the ripe bananas until mostly smooth.

3. Add the brown sugar, granulated sugar, melted butter, eggs, milk, and vanilla extract, then whisk until smooth.

4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

5. Add the dry ingredients to the wet ingredients and stir gently just until combined.

6. Divide the batter evenly among the muffin cups, filling each about three quarters full.

7. Bake for 18 to 22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack and cool before serving.

Notes

These muffins taste best when made with very ripe bananas that have lots of brown spots.

Do not overmix the batter or the muffins can turn out dense instead of soft.

For extra flavor, you can fold in chopped walnuts or chocolate chips before baking.
