Description

Irresistible Cranberry Turkey Stuffing Balls are the perfect savory holiday appetizer or leftover turkey dinner idea, made with tender turkey, seasoned stuffing, dried cranberries, and herbs for a cozy bite that is easy to bake, serve, and enjoy.


Ingredients

2 cups cooked turkey, finely chopped

3 cups prepared stuffing

1/2 cup dried cranberries, chopped if large

2 large eggs

1/2 cup onion, finely diced

1/2 cup celery, finely diced

1/4 cup chicken broth

1/2 cup breadcrumbs, plus more if needed

2 tablespoons fresh parsley, chopped

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1 tablespoon olive oil or melted butter


Instructions

1. Preheat the oven to 375°F and line a baking sheet with parchment paper or lightly grease it.

2. Add the cooked turkey, prepared stuffing, dried cranberries, onion, celery, parsley, salt, black pepper, and garlic powder to a large mixing bowl.

3. In a small bowl, whisk together the eggs and chicken broth.

4. Pour the egg mixture into the stuffing mixture and stir until everything is well combined.

5. Add the breadcrumbs and mix again until the mixture holds together. If it still feels too soft, add a little more breadcrumb.

6. Shape the mixture into balls about 1 1/2 inches wide and place them on the prepared baking sheet.

7. Brush the tops lightly with olive oil or melted butter.

8. Bake for 20 to 25 minutes, or until the stuffing balls are golden around the edges and heated through.

9. Let them rest for 5 minutes before serving warm.

Notes

These stuffing balls are a great way to use leftover turkey after a holiday meal.

If your stuffing is already very moist, start with less broth and add only what you need.

They taste especially good served with gravy or cranberry sauce.
