Ingredients
14 ounces canned salmon
1 large egg
1/2 cup breadcrumbs
1/4 cup finely diced onion
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions
1. Drain the canned salmon well and place it in a medium mixing bowl. Flake it with a fork until the texture is even.
2. Add the egg, breadcrumbs, diced onion, mayonnaise, lemon juice, parsley, Dijon mustard, garlic powder, paprika, salt, and black pepper. Mix until the ingredients are fully combined.
3. Divide the mixture into 4 equal portions and shape them into patties about 1/2 inch thick.
4. Heat the olive oil in a large skillet over medium heat until shimmering.
5. Place the salmon patties in the skillet and cook for 3 to 4 minutes on each side until golden brown and crisp.
6. Transfer the patties to a plate and let them rest for 1 to 2 minutes before serving.
7. Serve warm with lemon wedges, salad, rice, or your favorite dipping sauce.
Notes
Use well drained salmon so the patties hold together more easily and get crisp in the pan.
If the mixture feels too soft, add an extra spoonful of breadcrumbs before shaping.
Flip the patties gently with a thin spatula so they stay intact while cooking.
