Description

Lazy Girl Pecan Pie Bars are the easy pecan dessert you make when you want all the gooey, buttery flavor of classic pecan pie in simple bar form. With a tender shortbread crust, rich brown sugar filling, and crunchy pecans in every bite, these pecan pie bars are perfect for holidays, potlucks, and make ahead dessert trays.


Ingredients

2 cups all purpose flour

1/2 cup granulated sugar

1/4 teaspoon salt

1 cup unsalted butter, softened

3 large eggs

1 cup light corn syrup

1 cup packed light brown sugar

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

2 cups chopped pecans


Instructions

1. Preheat the oven to 350°F and grease or line a 9×13 inch baking pan with parchment paper.

2. In a large bowl, mix the flour, granulated sugar, and salt. Add the softened butter and combine until the mixture is crumbly and holds together when pressed.

3. Press the crust mixture evenly into the prepared pan and bake for 18 to 20 minutes, until lightly golden.

4. While the crust bakes, whisk the eggs in a medium bowl. Add the corn syrup, brown sugar, melted butter, and vanilla extract, then whisk until smooth.

5. Stir the chopped pecans into the filling mixture until evenly coated.

6. Pour the pecan filling over the hot crust and spread it gently into an even layer.

7. Bake for 25 to 30 minutes, until the edges are set and the center has a slight jiggle.

8. Cool completely in the pan before slicing into bars and serving.

Notes

These bars slice best after they have fully cooled, so do not rush that final step.

For deeper flavor, toast the pecans for a few minutes before stirring them into the filling.

A light sprinkle of flaky salt on top can balance the sweetness beautifully.
