Ingredients
1 tablespoon olive oil
1 small yellow onion, finely chopped
3 cloves garlic, minced
16 ounces mushrooms, sliced
2 cups cooked brown or green lentils
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups vegetable broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup sour cream
12 ounces egg noodles
2 tablespoons fresh parsley, chopped
Instructions
1. Bring a large pot of salted water to a boil and cook the egg noodles according to the package directions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 4 to 5 minutes until softened.
3. Stir in the minced garlic and cook for 30 seconds until fragrant.
4. Add the sliced mushrooms and cook for 8 to 10 minutes until they release their moisture and turn golden.
5. Stir in the cooked lentils and butter, then cook for 1 minute.
6. Sprinkle the flour over the mixture and stir well to coat everything evenly. Cook for 1 minute.
7. Slowly pour in the vegetable broth while stirring to keep the sauce smooth.
8. Add the Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper. Simmer for 4 to 5 minutes until the sauce thickens.
9. Reduce the heat to low and stir in the sour cream until the sauce is creamy and fully combined.
10. Add the cooked egg noodles to the skillet and toss gently to coat in the sauce.
11. Sprinkle with fresh parsley and serve warm.
Notes
Use baby bella mushrooms for a deeper, richer flavor if you want the sauce to taste more robust.
Stir the sour cream in over low heat so the sauce stays smooth and creamy.
If the sauce thickens too much after sitting, add a splash of broth or water when reheating.
