Ingredients
4 large russet potatoes
6 tablespoons butter
1 cup sour cream
1/2 cup milk
2 cups shredded cheddar cheese
8 slices cooked bacon, crumbled
3 green onions, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Instructions
1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
2. Bake the russet potatoes until fork tender, then let them cool slightly.
3. Peel the potatoes if desired and place the flesh in a large mixing bowl.
4. Add the butter, sour cream, milk, salt, black pepper, and garlic powder.
5. Mash until creamy with a little texture still remaining.
6. Stir in 1 1/2 cups of cheddar cheese, most of the bacon, and most of the green onions.
7. Spread the mixture evenly into the prepared baking dish.
8. Top with the remaining cheddar cheese and reserved bacon.
9. Bake for 20 to 25 minutes, until hot and bubbly.
10. Garnish with the remaining green onions and serve warm.
Notes
