Description

Mamaw’s Chicken and Rice Casserole is the ultimate comfort food classic, featuring creamy chicken, tender rice, and a buttery topping. This easy baked casserole is perfect for family dinners or meal prep and is a must-try southern chicken recipe.


Ingredients

3 boneless, skinless chicken breasts

1 cup uncooked white rice

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of chicken soup

1 1/2 cups chicken broth

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

4 tablespoons butter


Instructions

1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.

2. In a large mixing bowl, combine uncooked rice, cream of mushroom soup, cream of chicken soup, chicken broth, salt, pepper, and garlic powder. Mix well.

3. Pour the rice mixture into the prepared baking dish and spread it evenly.

4. Place the chicken breasts on top of the rice mixture. Season them with a little extra salt, pepper, and garlic powder.

5. Cut the butter into pats and scatter them over the chicken.

6. Cover the dish tightly with aluminum foil and bake for 1 hour and 15 minutes.

7. Remove foil and bake an additional 10 to 15 minutes until golden and bubbly.

8. Ensure chicken is fully cooked and rice is tender before serving.

Notes

This casserole freezes well for up to 3 months in an airtight container.

You can use chicken thighs or pre-cooked shredded chicken to reduce bake time.

Add in veggies like frozen peas or broccoli to make it a full one-dish meal.
