Description

Marry Me Chicken Orzo is a creamy one pan chicken orzo recipe made with tender chicken, parmesan, garlic, sun dried tomatoes, and spinach for an easy comforting dinner packed with rich flavor.


Ingredients

2 tablespoons olive oil

1 1/2 pounds chicken breast, cut into bite sized pieces

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

2 tablespoons butter

4 cloves garlic, minced

1/2 cup sun dried tomatoes, chopped

1 cup dry orzo

2 1/2 cups chicken broth

1 cup heavy cream

3/4 cup grated parmesan cheese

1/4 teaspoon red pepper flakes

2 cups fresh spinach

2 tablespoons fresh basil or parsley, chopped


Instructions

1. Season the chicken with salt, black pepper, and Italian seasoning.

2. Heat the olive oil in a large skillet over medium heat and cook the chicken until golden and cooked through, about 5 to 7 minutes. Transfer the chicken to a plate.

3. In the same skillet, melt the butter and cook the garlic and sun dried tomatoes for 1 to 2 minutes until fragrant.

4. Stir in the dry orzo and toast it for 1 minute.

5. Pour in the chicken broth, heavy cream, and red pepper flakes, then stir well and bring to a gentle simmer.

6. Cook the orzo for 10 to 12 minutes, stirring often, until tender and creamy.

7. Return the chicken to the skillet and stir in the parmesan cheese and spinach.

8. Cook for 2 to 3 minutes more until the spinach wilts and the sauce is silky.

9. Top with fresh basil or parsley and serve warm.

Notes

Use freshly grated parmesan for the smoothest sauce and best flavor.

Stir the orzo often while it cooks so it does not stick to the bottom of the pan.

Add a splash of broth when reheating leftovers to bring back the creamy texture.
