Ingredients

1 1/2 pounds chicken tenders

3 tablespoons olive oil

2 tablespoons fresh lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried parsley

1/2 teaspoon paprika

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon plain Greek yogurt

1 tablespoon fresh parsley, chopped

Lemon wedges, for serving


Instructions

1. In a medium bowl, whisk together the olive oil, lemon juice, garlic, oregano, dried parsley, paprika, onion powder, salt, black pepper, and Greek yogurt until well combined.

2. Add the chicken tenders and toss until every piece is evenly coated. Let the chicken marinate for 20 minutes at room temperature or up to 2 hours in the refrigerator.

3. Heat a large skillet over medium heat and lightly oil the pan if needed.

4. Arrange the chicken tenders in a single layer and cook for 3 to 4 minutes per side, until golden on the outside and cooked through in the center.

5. Transfer the cooked chicken to a plate and let it rest for a few minutes.

6. Sprinkle with fresh parsley and serve with lemon wedges.

Notes

For the juiciest texture, do not overcook the chicken tenders.

A short marinade works well, but a longer marinade gives deeper flavor.
