Ingredients
1 pound ground beef
1 small onion, chopped
1 green bell pepper, chopped
2 tablespoons taco seasoning
1 tablespoon tomato paste
2 tablespoons water
1 1/2 cups shredded cheddar cheese
4 hoagie rolls
4 tablespoons mayonnaise
1 cup shredded lettuce
1 cup diced tomatoes
1/4 cup pickled jalapeños
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and green bell pepper, then cook for 3 to 4 minutes until softened.
2. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked. Drain excess grease if needed.
3. Stir in the taco seasoning, tomato paste, water, salt, and black pepper. Cook for 2 minutes until the meat is well coated and flavorful.
4. Sprinkle the shredded cheddar cheese over the beef mixture and chop it into the meat with your spatula until melted and evenly combined.
5. Slice and lightly toast the hoagie rolls in a dry skillet or under the broiler.
6. Spread mayonnaise inside each roll.
7. Fill each roll with the hot chopped cheese beef mixture.
8. Top with shredded lettuce, diced tomatoes, and pickled jalapeños.
9. Serve immediately while hot.
Notes
Toasting the rolls helps keep the sandwich from getting soggy.
Pepper jack works well if you want a spicier sandwich.
Add avocado or hot sauce at the end for extra flavor.
