Ingredients
1 cup unsalted butter
6 oz dark chocolate
3/4 cup granulated sugar
1/2 cup brown sugar
3 large eggs
1 tsp vanilla extract
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 tsp salt
2 Mint Aero bars, roughly chopped
1/2 cup chocolate chips
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. Melt the butter and dark chocolate together until smooth, then let the mixture cool slightly.
3. Whisk in the granulated sugar and brown sugar until well combined.
4. Add the eggs one at a time, then stir in the vanilla extract.
5. Fold in the flour, cocoa powder, and salt just until no dry streaks remain.
6. Stir in the chocolate chips.
7. Spread the batter evenly into the prepared pan.
8. Scatter the chopped Mint Aero bars over the top and press a few pieces lightly into the batter.
9. Bake for 28 to 32 minutes, until the edges are set and the center still has moist crumbs.
10. Cool completely before slicing into squares.
Notes
Use good-quality dark chocolate for the richest brownie flavor.
Do not overmix once the flour is added or the brownies can turn dense in the wrong way.
For cleaner slices, chill the brownies for 30 minutes before cutting.
