Ingredients
1 cup unsalted butter, divided
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
3/4 cup all-purpose flour
1/4 teaspoon salt
2 cups powdered sugar
1 1/2 teaspoons peppermint extract
2 to 3 drops green food coloring, optional
2 tablespoons heavy cream
1 cup semi-sweet chocolate chips
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. Melt 1/2 cup of the butter and whisk it with the granulated sugar until combined.
3. Add the eggs and vanilla extract, then whisk until smooth.
4. Stir in the cocoa powder, flour, and salt until the batter is fully combined.
5. Spread the batter evenly into the prepared pan and bake for 22 to 26 minutes, until the center is set and a toothpick comes out with a few moist crumbs.
6. Let the brownie layer cool completely.
7. In a bowl, beat the remaining 1/2 cup butter with the powdered sugar, peppermint extract, and green food coloring until smooth and creamy.
8. Spread the mint filling over the cooled brownies and chill for 20 to 30 minutes.
9. Heat the heavy cream until hot, then pour it over the chocolate chips. Let it sit for 1 minute, then stir until smooth.
10. Spread the chocolate topping over the mint layer.
11. Chill the brownies for at least 1 hour, then slice and serve.
Notes
Use peppermint extract instead of mint extract if you want that classic cool mint brownie flavor.
Chilling the brownies before slicing helps keep the layers neat and clean.
