12 ounces andouille sausage, sliced

1 small yellow onion, diced
3 cloves garlic, minced
2 cups chicken broth
1 can diced tomatoes, 14.5 ounces
1 cup heavy cream
8 ounces penne pasta
1 cup Parmesan cheese, grated
1 teaspoon paprika
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes, optional
2 tablespoons fresh parsley, chopped
Instructions
1. Heat the olive oil in a large deep skillet over medium heat. Add the sliced andouille sausage and cook until browned on both sides.
2. Add the diced onion and cook until softened, about 3 to 4 minutes. Stir in the minced garlic and cook for 30 seconds.
3. Pour in the chicken broth and diced tomatoes. Stir in the paprika, Italian seasoning, salt, black pepper, and crushed red pepper flakes if using.
4. Add the penne pasta and stir well so the pasta is mostly covered by the liquid.
