This easy Mediterranean-inspired orzo pasta salad is perfect for picnics, meal prep, potlucks, and light family dinners.


Ingredients

1 cup uncooked orzo

1 cup crumbled feta cheese

3/4 cup chopped sun dried tomatoes

1 cup diced cucumber

1 cup halved cherry tomatoes

1/4 cup finely diced red onion

1/3 cup sliced black olives

1/4 cup chopped fresh parsley

1/4 cup olive oil

2 tablespoons lemon juice

1 clove garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Bring a pot of salted water to a boil and cook the orzo according to the package directions until tender. Drain and rinse briefly under cool water, then let it drain well.

2. In a large mixing bowl, add the cooled orzo, feta cheese, sun dried tomatoes, cucumber, cherry tomatoes, red onion, black olives, and parsley.

3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.

4. Pour the dressing over the salad and toss gently until everything is evenly coated.

5. Cover and chill the salad for 20 to 30 minutes for the best flavor.

6. Toss once more before serving and garnish with extra feta or parsley if desired.

Notes

This salad tastes even better after chilling because the orzo absorbs more of the dressing.

If the salad tightens up in the fridge, stir in a small splash of olive oil or lemon juice before serving.

For a more filling version, add grilled chicken, shrimp, or chickpeas.
