Description

Quick and Easy Chicken Divan is a creamy chicken and broccoli casserole baked with cheddar cheese and a buttery crumb topping, making it an easy comfort food dinner for busy weeknights, family meals, and cozy make-ahead casseroles.


Ingredients

2 cups cooked chicken, shredded or chopped

4 cups broccoli florets, lightly steamed

1 can cream of chicken soup

1/2 cup sour cream

1/4 cup mayonnaise

1 1/2 cups shredded cheddar cheese, divided

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs

2 tablespoons butter, melted


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Spread the lightly steamed broccoli evenly in the prepared baking dish.

3. Add the cooked chicken over the broccoli in an even layer.

4. In a mixing bowl, stir together the cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, salt, black pepper, and 3/4 cup of the shredded cheddar cheese until smooth.

5. Spoon the creamy mixture over the chicken and broccoli, then spread it gently to cover the casserole evenly.

6. Sprinkle the remaining 3/4 cup cheddar cheese over the top.

7. In a small bowl, mix the breadcrumbs with the melted butter, then scatter the mixture over the cheese layer.

8. Bake for 25 to 30 minutes, until hot and bubbly and the top is lightly golden.

9. Let the casserole rest for 5 minutes before serving.

Notes

Use rotisserie chicken to make this casserole even faster on a busy night.

Drain frozen broccoli well after thawing so the casserole stays creamy and not watery.

Let the dish rest before serving so the sauce thickens slightly and the portions hold together better.
