Ingredients
1 lb chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1 small red onion, sliced
1 medium zucchini, sliced into half moons
1/2 cup Kalamata olives, pitted
1/2 cup feta cheese, crumbled
2 tablespoons lemon juice
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Cut the chicken breast into bite-sized pieces and place them in a bowl. Add 1 tablespoon of olive oil, oregano, paprika, salt, and black pepper, then toss until the chicken is evenly coated.
2. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6 to 8 minutes, stirring occasionally, until golden and cooked through.
3. Add the minced garlic and sliced red onion to the skillet. Cook for 2 minutes until fragrant and slightly softened.
4. Stir in the zucchini and cherry tomatoes. Cook for 4 to 5 minutes until the zucchini is tender and the tomatoes begin to soften.
5. Add the Kalamata olives and lemon juice, then stir gently to combine all the flavors.
6. Turn off the heat and sprinkle the feta cheese and fresh parsley over the top.
7. Serve warm on its own or with couscous, rice, quinoa, or warm pita bread.
Notes
Cut the chicken into even pieces so it cooks quickly and stays juicy.
Do not overcook the zucchini since it should stay tender, not mushy.
Add the feta at the end so it keeps its creamy texture and fresh tangy flavor.
