Quick & Healthy Breakfast Cookies are soft, chewy oat cookies made with banana, peanut butter, and simple wholesome ingredients for an easy grab-and-go breakfast, healthy snack, or meal prep breakfast cookie option.
Ingredients
2 ripe bananas
1 1/2 cups old-fashioned oats
1/3 cup peanut butter
2 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 tablespoon chia seeds
1/4 cup chopped walnuts
1/4 cup raisins or mini dark chocolate chips
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. Add the ripe bananas to a mixing bowl and mash until mostly smooth.
3. Stir in the peanut butter, honey, and vanilla extract until fully combined.
4. Add the oats, cinnamon, salt, and chia seeds, then mix until everything is evenly distributed.
5. Fold in the walnuts and raisins or mini dark chocolate chips.
6. Scoop the mixture onto the prepared baking sheet and gently flatten each portion into a cookie shape.
7. Bake for 12 to 15 minutes, until the cookies are set and lightly golden around the edges.
8. Let the cookies cool for 5 minutes on the pan, then transfer to a wire rack before serving or storing.
Notes
These cookies do not spread much, so shaping them before baking helps them look more even.
Use very ripe bananas for the best sweetness and the softest texture.
Store the cookies in an airtight container in the fridge for up to 5 days, or freeze them for longer meal prep.
