Description

Ricotta Chicken is a creamy baked chicken dinner made with tender chicken breasts, ricotta cheese, marinara sauce, mozzarella, and Parmesan for an easy comfort food recipe that is rich, cheesy, and perfect for a cozy family meal.


Ingredients

2 large chicken breasts

1 cup ricotta cheese

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons chopped fresh parsley


Instructions

1. Preheat the oven to 375°F and lightly grease a baking dish. Pat the chicken dry, then slice or pound it to an even thickness.

2. Season the chicken on both sides with the salt and black pepper.

3. In a medium bowl, mix the ricotta cheese, egg, garlic, Italian seasoning, and 1/4 cup of the Parmesan until smooth.

4. Spread a little marinara sauce over the bottom of the baking dish.

5. Arrange the chicken in a single layer over the sauce.

6. Spoon the ricotta mixture over each piece of chicken and spread it gently.

7. Add the remaining marinara sauce around and slightly over the chicken.

8. Sprinkle the mozzarella and the remaining Parmesan over the top.

9. Bake for 30 to 35 minutes, until the chicken is cooked through and the cheese is melted and lightly golden.

10. Let the dish rest for 5 minutes, then top with chopped parsley and serve warm.

Notes

Use whole milk ricotta for the creamiest texture and best flavor.

If your chicken breasts are very thick, pound them evenly so they bake at the same rate.

For extra color on top, broil the dish for 1 to 2 minutes at the end while watching carefully.
