Description
Ritz Cracker Christmas Cookies are an easy holiday dessert made with buttery Ritz crackers, creamy peanut butter, and a smooth chocolate coating for the perfect sweet and salty Christmas treat.
Ingredients
48 Ritz crackers
1 cup creamy peanut butter
12 ounces chocolate melting wafers or chocolate chips
1 tablespoon coconut oil or shortening
2 tablespoons holiday sprinkles
2 ounces white chocolate, optional
2 tablespoons crushed peppermint candies, optional
Instructions
1. Line a baking sheet or tray with parchment paper and set it aside.
2. Spread about 1 teaspoon of creamy peanut butter onto 24 Ritz crackers.
3. Top with the remaining 24 crackers to make sandwich cookies and press gently.
4. Add the chocolate and coconut oil to a microwave-safe bowl.
5. Microwave in 20-second intervals, stirring after each one, until the chocolate is smooth and melted.
6. Dip each cracker sandwich into the melted chocolate, turning to coat fully.
7. Lift each cookie out with a fork, let the excess chocolate drip off, and place it on the prepared tray.
8. Decorate the tops with holiday sprinkles, white chocolate drizzle, or crushed peppermint while the coating is still wet.
9. Let the cookies sit at room temperature until set, or refrigerate the tray for 20 minutes to firm up faster.
10. Serve once the chocolate coating is fully set.
Notes
Use creamy peanut butter for the smoothest filling and easiest sandwiching.
Work in small batches when dipping so the chocolate stays fluid and easy to coat with.
