Ingredients
1 pound Italian sausage
1 medium onion, chopped
3 cloves garlic, minced
1 tablespoon tomato paste
1 can (28 ounces) crushed tomatoes
4 cups chicken broth
1 cup ditalini pasta
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
1. Heat a large pot over medium heat and cook the sausage, breaking it up with a spoon, until browned and fully cooked. Remove and set aside.
2. In the same pot, sauté chopped onion for 4–5 minutes until softened. Add minced garlic and cook for another minute.
3. Stir in tomato paste and let it cook for a minute to deepen the flavor.
4. Pour in crushed tomatoes, chicken broth, and Italian seasoning. Bring to a gentle simmer.
5. Return sausage to the pot, then add ditalini pasta. Simmer for about 10 minutes, stirring occasionally, until pasta is tender.
6. Taste and adjust salt and pepper as needed.
7. Ladle into bowls and garnish with fresh basil or parsley. Serve hot.
Notes
Let the soup rest for a few minutes before serving for best flavor.
Add red pepper flakes if you like a spicier kick.
To freeze, leave out the pasta and add it fresh when reheating.
