Softbatch Cream Cheese Chocolate Chip Cookies are thick, tender, bakery-style cookies with a rich buttery flavor, a hint of tangy cream cheese, and plenty of melty chocolate chips for the perfect soft and chewy bite.
Ingredients
2 1/4 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
4 ounces cream cheese, softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 cups semi-sweet chocolate chips
Instructions
1. Preheat the oven to 350°F and line baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
3. In a large bowl, beat the butter, cream cheese, brown sugar, and granulated sugar until smooth and fluffy.
4. Add the egg and vanilla extract, then mix until fully combined.
5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Fold in the chocolate chips until evenly distributed throughout the dough.
7. Cover the dough and chill for 1 hour to help the cookies bake up thick and soft.
8. Scoop the dough into evenly sized portions and place them a few inches apart on the prepared baking sheets.
9. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers still look slightly soft.
10. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
For extra soft cookies, do not overbake them. The centers should still look slightly underdone when you remove them from the oven.
Chilling the dough is important for keeping the cookies thick and preventing too much spreading.
For a bakery-style look, press a few extra chocolate chips into the tops of the dough balls before baking.
