Description

Strawberry Eclair Cake is a creamy no-bake dessert made with graham crackers, vanilla pudding, whipped topping, fresh strawberries, and chocolate frosting for an easy chilled treat that is perfect for potlucks, summer parties, and make-ahead family desserts.


Ingredients

3 cups cold milk

2 packages instant vanilla pudding mix, 3.4 ounces each

1 container whipped topping, 8 ounces, thawed

1 pound fresh strawberries, hulled and sliced

14 ounces graham crackers

1 container chocolate frosting, 16 ounces


Instructions

1. In a large bowl, whisk together the cold milk and instant vanilla pudding mix for about 2 minutes until it begins to thicken.

2. Fold in the whipped topping until the filling is smooth, light, and fully combined.

3. Arrange a single layer of graham crackers in the bottom of a 9ร—13-inch baking dish, breaking pieces as needed to fit.

4. Spread half of the pudding mixture over the graham crackers.

5. Add half of the sliced strawberries over the pudding layer.

6. Place another layer of graham crackers on top.

7. Spread the remaining pudding mixture evenly over the second cracker layer.

8. Top with the remaining sliced strawberries.

9. Finish with a final layer of graham crackers.

10. Warm the chocolate frosting slightly until spreadable, then gently spread it over the top layer.

11. Cover and refrigerate for at least 6 hours, or overnight, before slicing and serving.

Notes

This dessert slices best after chilling overnight, because the graham crackers soften into a cake-like texture.

Dry the strawberries well after washing so the layers stay creamy and do not become watery.

Let the frosting soften slightly before spreading so it goes on smoothly without pulling up the top cracker layer.
