Description

Super Soft Loaded Easter Egg Bars are buttery, chewy dessert bars packed with pastel chocolate eggs and white chocolate chips, making them a fun Easter treat, spring dessert, and easy cookie bar recipe for parties, bake sales, and holiday gatherings.


Ingredients

1 cup unsalted butter, softened

1 1/4 cups light brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 3/4 cups all-purpose flour

2 teaspoons cornstarch

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups mini chocolate eggs, roughly chopped

1 cup white chocolate chips


Instructions

1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper or lightly grease it.

2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Add the eggs one at a time, then mix in the vanilla extract until smooth.

4. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.

5. Add the dry ingredients to the wet ingredients and mix just until combined.

6. Fold in most of the chopped mini chocolate eggs and white chocolate chips, reserving a small handful for the top.

7. Spread the batter evenly into the prepared pan and press the remaining candy eggs and white chocolate chips over the top.

8. Bake for 24 to 28 minutes, until the edges are lightly golden and the center is just set.

9. Cool completely in the pan before slicing into 16 bars.

Notes

For the softest bars, do not overbake them. The center should still look slightly soft when you pull the pan from the oven.

Roughly chopping the mini eggs helps distribute the candy and chocolate more evenly through the batter.

Let the bars cool fully before slicing so they hold their shape and cut cleanly.
