Ingredients
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
1/2 cup strawberry jam
1/2 cup raspberry jam
2 tablespoons powdered sugar, for dusting
Instructions
1. In a medium bowl, whisk together the flour and salt.
2. In a large mixing bowl, beat the softened butter and granulated sugar until pale and fluffy.
3. Mix in the egg yolk and vanilla extract until smooth.
4. Add the dry ingredients to the butter mixture and mix just until a soft dough forms.
5. Shape the dough into a disk, wrap it, and chill for 30 to 45 minutes.
6. Preheat the oven to 350°F and line baking sheets with parchment paper.
7. Roll the chilled dough on a lightly floured surface to about 1/4 inch thick.
8. Cut out heart-shaped cookies, then cut a smaller heart in the center of half of them.
9. Arrange the cookies on the prepared baking sheets.
10. Bake for 10 to 12 minutes, or until the edges are just lightly golden.
11. Let the cookies cool completely on a wire rack.
12. Spread strawberry jam or raspberry jam onto the solid cookies.
13. Place the cutout cookies on top to create sandwich cookies.
14. Dust lightly with powdered sugar before serving.
