Description

Biscoff Tiramisu Cups are a creamy no-bake dessert layered with coffee-soaked Biscoff cookies, mascarpone filling, and cookie butter flavor, making them an easy individual tiramisu treat for parties, holidays, or make-ahead desserts.


Ingredients

2 cups heavy whipping cream

8 ounces mascarpone cheese

1/2 cup Biscoff cookie butter

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup strong brewed coffee or espresso, cooled

18 Biscoff cookies

2 tablespoons crushed Biscoff cookies

1 tablespoon unsweetened cocoa powder


Instructions

1. In a large bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.

2. In a separate bowl, stir together the mascarpone cheese, Biscoff cookie butter, and vanilla extract until smooth.

3. Gently fold the whipped cream into the mascarpone mixture until light and fully combined.

4. Pour the cooled coffee or espresso into a shallow bowl.

5. Dip each Biscoff cookie briefly into the coffee, making sure not to soak them too long.

6. Place a layer of dipped cookies into the bottom of 6 serving cups.

7. Spoon or pipe a layer of the mascarpone filling over the cookies.

8. Repeat the layers with more dipped cookies and more filling until the cups are filled.

9. Cover and chill the cups for at least 4 hours, or overnight for the best texture.

10. Before serving, dust the tops with cocoa powder and finish with crushed Biscoff cookies.

Notes

Use cold heavy cream so the filling whips up light and stable.

Dip the cookies quickly to keep them from turning mushy.

For the best flavor and texture, make the cups a day ahead and chill overnight.
