Description
Zesty Lemon Meltaway Cookies are soft, buttery lemon cookies with fresh lemon zest, powdered sugar, and a delicate melt-in-your-mouth texture, making them a bright and easy citrus dessert for any occasion.
Ingredients
1 cup unsalted butter, softened
3/4 cup powdered sugar
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup cornstarch
1/4 teaspoon salt
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. In a large bowl, beat the softened butter and powdered sugar until light and smooth.
3. Mix in the lemon zest, lemon juice, and vanilla extract until fully combined.
4. In a separate bowl, whisk together the flour, cornstarch, and salt.
5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Cover the dough and chill for 30 minutes.
7. Scoop small portions of dough and roll them into balls. Place them on the prepared baking sheet.
8. Bake for 10 to 12 minutes, until the bottoms are lightly golden and the tops are set.
9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
10. Dust with powdered sugar or add a light lemon glaze if desired.
Notes
Chilling the dough helps the cookies keep their shape and improves the texture.
Do not overbake them, because they should stay pale and soft on top.
A simple glaze made with powdered sugar and lemon juice adds even more citrus flavor.
